This is a firm family favourite and seems way more complicated than it actually it. My sister gave it a cute South African Christmas vibe by turning it into a Christmas tree. Perfect for a hot summer’s day.
- Watermelon either cut into about 2.5cm cubes or a tree like shown above
- Feta – cubed
- Cashew or peanut brittle – shattered into 1cm shards
- Sweet Chilli Sauce – I prefer one that is not too hot so that it adds only a slight kick without being over powering
Create a bed with the rocket leaves and toss the other ingredients together above it.
